Kale Salad Recipe:
– 2 bunches of organic lacinato (dinosaur) kale, chopped in bite-sized pieces
– 1 to 2 cloves of garlic, finely minced
– juice of 1/2 a lemon
– 2 tbs of nutritional yeast (optional)
– 3-4 tbs of extra virgin olive oil
– 1/4 cup of dried cranberries
– 1/4 cup of toasted pecans
– pinch of salt
– dash of ground black pepper
